You should have enabled WooCommerce before you have imported Demo Content since products are not imported otherwise. There was also a warning regarding that when you were importing demo content
However, there is a solution to the issue you are facing. You need to import demo content again, but keep in mind that it will overwrite changes you have made in the existing pages that you got with demo import and the Menus will be duplicated. So before you perform another demo import please go to Appearance > Menus and there delete all of the Menus

Before I import the demo content again specifically for the products section, what can I do to save the other universal changes that I have made? I don't want to lose all the work I have done :)
All global changes made for instance in Elated options won't be affected, only the thing that are imported previously will be overridden like pages ( their content and settings of the pages ) ect.
But if you made some major changes in the existing pages that will be re-imported you should consider importing demo content again since it will override all changes.
