1) Are you referring to location of the certain Listings in the Map on the search results page? Or you are referring to Listing Location https://www.screencast.com/t/nG3ub88G0yKr . For the first please just set it's address in the back-end of the Listing in address field https://www.screencast.com/t/oOGcnuAoXd and for the second issue check Listing Location box on the right side of the back-end of the single Listing https://www.screencast.com/t/BLmKd8KGVP . Please let us know if this was the issue or elaborate a bit more please.
2) Listing order is default WordPress ordering of the posts/pages/custom post type where first are shown most recent published ones. To change that default order you can use some Custom Post Order plugin.
