We have tested this functionality and it works perfectly on our side since once in Elated Testimonials element that category is saved and it is applied on the front-end. So please make sure you have not changed any Testimonials categories in the back-end in the meantime https://www.screencast.com/t/2TRwMLhtZXt . Also, make sure to disable all third party plugins and test it again, with making sure that category you entered does exist and that there are some Testimonials items in it.
If you still struggle with this please provide us WP Admin access so we can investigate it closer.
