If you want to change product image dimensions, just go to WooCommerce >> Settings >> Products >> Display >>
Then you need to regenerate all thumbnails with some 3rd party plugin, like this one >> https://wordpress.org/plugins/regenerate-thumbnails/ (Tools > regenerate thumbnails >> Regenerate All thumbnails.)
