1. This particular part you are referring to is called a slug. Each custom post type needs to have a slug. So you renamed default "portfolio_item" (default one) to "find".
Your categories will be www.website.com/slug-category/category-name
You cannot have it www.website.com/category/category-name
So, what you wish to achieve is not really possible.
