With the search bar how am I able to change the search filter so it can search based on a 'Post Code' instead of a name and then change the result filters so I can delete the email bar etc.
Such an option, unfortunately, does not exist within the theme, we are sorry. Achieving this will require some custom coding, but we are not in a position to accept any custom work, because we primarily need to focus on providing Theme Support to all customers. We hope you understand.

Anyhow, note that you can enable search listings by location (install/activate this plugin >> https://wordpress.org/plugins/wp-job-manager-locations/ and then try to add Post Codes instead of some Regions/Cities).
