1. Logo is correct at a slightly wider size but when site is taken down to mobile width and viewed on phone the logo jumps out of the header and distorts

We have taken your demo site dimensions for the mobile logo (see screen grab 4), so should not be experiencing this.
QUERY 2- FORMATTING
Search bar and button is not centered when I view the site on mobile. Button also exceeds it's boarder (see screen grab 1) where 'search places' is not inside the button border.
QUERY 3- SELECTIVE CONTENT ON MOBILE
Can I select which info is viewed on mobile and make it different to the footage shown on desktop version?

I've just tested on my iphone on the 'SEARCH PLACES' button arrow drops down onto the next line whereas it does not do this on your FINDME theme or on my desktop when I compress.

1. & 2. You can try to add this css underneath in Elated Options >> General >> Custom CSS field:
@media only screen and (max-width:480px) {.eltd-mobile-logo-wrapper a img {
height: 50px !important;
padding-top: 25px
}
}
3. You can add desired Widgets into Mobile Header >> Widget area, and that will be shown on mobile header only
On desktop view Header Widget Menu area will be shown.

Without that padding my search bar spans the full width of my homepage.
Removing the padding does indeed fix the mobile layout but it does not work for my desktop.

1. Listing headlines (see screen grab). The lower sentence overlaps the one above in the listing title
2. The amenities overlap one another (see screen grab).
