I have a question about the WPbakery Page Builder. Indeed, he is activated in my extensions but he only appears on my pages in "Pages" and not in "Brynn Portfolio" where are my projects. I cannot edit them with the Page Builder, I only have where I can edit the text. (See the attachment file)

In order to enable WPBakery Page Builder for WordPress (formerly Visual Composer) on Different Post Types like Posts or Portfolio Pages.
You need to navigate to Dashboard > WPBakery Page Builder > Role Manager > choose a role > set Post types to Custom > check the post types where you want a builder to show in.

And yes I have an other problem... I am quite a beginner in managing Wordpress backend...
It's about the header. I successfully managed to have it the way I want in the pages of the menu (home, about, contact) - I choosed the minimal one with the logo on the left side and the three points menus on the right side (attachment file 1,2 as I want it) - and I cannot adjust it in the other pages of my portfolio. I tried to put the same settings in the pages of the portfolio as in the menu pages (the home, about, contact) but it doesn't work... The three points only appear and the fullscreen menu (attachment file 3,4).
We are very sorry for the late answer, we were working with a limited resources for a past few days, thank you for your patience and your understanding!
Fist you should make sure that your default header type is set to Standard in Brynn Options>Header:
Later you should check if your header type is set to default in the backend of those pages where you are facing a problem:
