However we do have a question. Within the "simple social network widget" when choosing Pinterest as the social media we do get the facebook (FB) icon both in the sidebar and in the footer. Is there a way to manually work my way around it through the code?

You can try by adding the following code to your Elated Options > General > Custom JS:
jQuery(".eltd-simple-social-networks-holder .eltd-simple-network-item a[href*='pinterest'] span").text('PI.');I was not sure what the shortened version of pinterest is so I put PI. You could change that if you'd like.
