You can go to Listings > Listing Categories, and click on desired category.
Scroll down to Choose Listing Type, and set it to Simple and then you can set the Category Custom Link.

I'm not quite sure what you're referring to. Do you want to change the slug listing-category in URL?
If you do, you can use Permalink manager plugin for that: https://wordpress.org/plugins/permalink-manager/

How do I activate "Listing Categories" in my theme? I only have "Listing Types"
