I also can't find colour settings in the Elated theme options. I would like to be able to change the hover colour from yellow on the Read More buttons.

Let's see how we can help you solve your issues.
1) Regarding adding padding to the menu, you can insert the following code into Appearance > Customize > Additional CSS
4) As for the blurb, when editing your post, you should find it in the Excerpt section.
Before that, make sure that Excerpt option is checked in your Screen Options in the top right corner.
If you still have trouble locating it, it would be great if you would provide us your login credentials so we could take a closer look.
5) Regarding Slider and Parallax, when I took a look at your site, I noticed that you removed the slider, have you decided not to use it? Anyway, Parallax is Revolution Slider's feature which is a 3rd party plugin, so if you have any issues with it you should refer to the author of the plugin or the team behind it.

5) I removed the overlapping content for the main page, but the parallax items are still there. I've attached screen grabs for those. In Chrome they work fine, but in Firefox they are just static images that scroll with the page.
5. It is possible that something has not been installed/adjusted correctly, or it can be that some 3rd party plugin causes this issue.
Try to deactivate all of your plugins to make sure they are not causing this issue. If the issue goes away, then you can enable them one by one to find out which one is causing the issue. If you still have issues after you have deactivated all of your plugins, please provide a temporary admin login (in PRIVATE REPLY) and URL to your site and I’ll take a look.

Could you also please show me where to upload the favicon for the site to appear in the tabs? Right now it's showing the rnby favicon.
And is there a way to add a bit of padding to the right side of the standard menu so that it's not so close to the black border?

Appearance > Customize > Site Identity > Site Icon

You need to navigate to Dashboard > Posts > find and Edit single post > on this page find Screen Options > enable "Excerpt" > edit Excerpt field:
