1) You could do so if you go to Elated Options -> Blog -> and set Archive and Category Sidebar to Sidebar 1/4, and choose to display Shop Sidebar:
2) Since all the pages you've mentioned can be edited, you could change the header style in Elated Header section of these pages as you can see on the screenshots below:
The product pages though would inherit the header from the Shop page you set in WooCommerce -> Settings -> Products.

I would like to know how to change product category style ? I would like to set shop sidebar and 3 columns.
And for Woocommerce pages (account, cart, etc.), I can't change header style, how can I do that ?
