2- You will have to use the exact file structure in the child theme as it is in the parent one, you can see that within the file paths I have posted above.
3- The category page's title should already be set to the category name. Is it not for you? (see image below)

Hi,
I need to customise/change the pages' title specially the Woocommerce products pages' titles and the categories pages' titles to show:
- Products pages titles: The category name of the product
- Category pages titles: The name of the category
I want to make the changes on the child theme to not lose the changes when updating in the future.
1. What files can I change?
2. What file structure that I need to create on the "theaisle-child" theme?
3. What template's files can I customise and what structure can I use to put the files in the child theme?

Welcome to your support management and thank you for choosing our theme!
1- In order to change the titles of the product pages you need to edit the following files according to the style of the title area you have chosen:
Centered:
wp-content/themes/theaisle/framework/modules/title/types/centered/templates/centered-title.php
Breadcrumbs:
wp-content/themes/theaisle/framework/modules/title/types/breadcrumbs/templates/breadcrumbs-title.php
Standard:
wp-content/themes/theaisle/framework/modules/title/types/standard/templates/standard-title.php
Standard with breadcrumbs:
wp-content/themes/theaisle/framework/modules/title/types/standard-with-breadcrumbs/templates/standard-with-breadcrumbs-title.php
