First I would like to thank you for your complete and well-organized work.
I issued a Let's encrypt certificate with a forced-redirect, changed website address to https:// and cleared cache. As usual had a couple of mixed content issues to solve.
As per the logo, I have tried to replacing it in both "elated options" and specific page, deleting / redownloading / cleared the cache (varnish and browser) but the website is still trying to serve the image with http://
