Thanks for the info. To be clear, we'd like to change "Related Projects" to "Related Galleries" - not into another language. I understand that the below instructions may reach the same result but before I try that I wanted to ask if this would cause issues with translating the site into different languages using GTranslate or a similar plugin? The client has just requested we add a translation plugin. Please advise.
It shouldn't cause issues with translations to other languages because the change you want to make would be made in your current language.
So for example, if your site is currently in English, and you change the Related Projects label using a translating plugin, you would basically "translate" English to English. Then if you wanted to translate to a different language, for example Spanish, you would create completely new translations for this language which wouldn't affect the labels in your original language because these are two separate files that are created and loaded when you switch between languages.

Theme labels can be changed or translated to your language with poedit software which is native wordpress way - following guides may be helpful
