Can you consider changing way how to select categories to display? Right now it is difficult to exclude one category. I can select all or one in post layouts. There is no simple way of excluding only one. Dropdown menu is ok, can you change behavior to select categories you want to display? Then you can have only one field to manage this. I have many categories and this is super tedious process to manage them in Elated post layouts. This is just suggestion :)
Unfortunately we don't have something like that on our to do list :( maybe it will help if you add some categories to be have same parent category, and than set to show that parent category. In that case all categories under that parent category should appear on your page.
