You're not seeing the option because you're using the element "Listing Packages" in the visual composer when you should be using "Elated Pricing Tables".
Look at the screenshot Elated Themes attached on how to structure it properly. Once you add the "Elated Pricing Tables" and hit edit you should be able to change the symbol of the currency you want to use.
For now, you can set your pricing page as we have done on our demo, where we have used Elated Pricing Tables. We will improve our elements, we are working on new updates.

Ok, but this is a valid item to use, so it's unusable?
Currency throughout a theme should be 1 change, not many coding changes in templates and pages.
